WHere is a home-style interpretation of a cocktail featured on the seasonal menu. This is a large-volume premix which is bursting full of flavours of the Christmas time, which makes it perfect for a holiday party. Save the extra syrup for morning drinks, puddings, or to mix additional servings of bikinis.
Bikini
Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Put all the ingredients inside a pot, heat until it reaches a simmer, agitating to dissolve. After that, turn off the stove allowing it to reach room temperature completely. Decant into a sterilised bottle, seal and store in the refrigerator, where it will keep for around four weeks.
For the Batch Mix: Combine all the spirits and syrup in a big jug, allow it to infuse for an hour, then filter it preferably using cheesecloth, making it completely strained.
To serve: Measure 85ml from the cocktail base to a stirring glass filled with ice, gently stirring gently for a minute to chill. Pour into a chilled martini glass or a similar vessel, top with a few cranberries adding the final touch with a quick spritz with the mandarin essence above the glass.
